This is definitely an intriguing idea and has a lot of potential. It is impressive how the students are expected to follow the scientific method of creating hypotheses and conduct experiments, uniting math with science, and writing about those steps during the process. Students are also given a lot of freedom to design their own planes and be creative. I think the lesson could be strengthened by creating a structure to guide students to analyze how the geometry affected flight. For example, did square wings or triangle wings work more effectively? How did surface area of the wings affect length of the flight? I know it would be very challenging to do, but concepts that affect flight like lift, thrust, etc could be introduced, and depending on how advanced the math level is, formulas could be introduced to show students how math can be used to address physical (engineering) needs. Again, my compliments on sharing a fundamentally sound idea that can be developed further into and even more academically engaging activity.
